Lemon chicken

Lemon chicken

1 tsp cornstarch
1/2 tesp salt
1//4 tsp dried thyme leaves
1/4 cup lemon juice
1/4 cup water
3 Tab oil
2 – 4 chicken breasts boned, skinned, cut into pieces
1 large carrot, sliced
1 pound zucchini, sliced…like 2 cups
1 cup diced celery
1 clove garlic minced
Grated rind of 1 lemon/optional

In small bowl, stir together cornstarch, slat and thyme. Stir in lemon juice and water until smooth. Set aside

In wok or large skillet, heat 2 tab of the oil over medium high heat.
Add chicken, 1/2 at a time, and stir-fry about 3-4 min, or until lightly browned. Remove chicken from wok. Add remaining 1 tab oil. Add carrots; stir fry 1-2 min. Add zucchini; stir fry 1 min. Add celery, garlic and lemon rind and stir fry 1 min.

Return chicken to wok. Restir cornstarch mixture. Stir into wok. Stirring constantly, bring to boil over med heat and boil 1 min.
