Pumpkin Bread

3 1/2 cups flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
3 cups sugar
1 can 16 0z solid pack pumpkin (like 2 cups)
1 cup oil
2/3 cup water
4 eggs

Grease and flour three 1 pound tall coffee cans or loaf pans etc.

In large mixing bowl thoroughty stir together the flour, baking soda, salt, cinnamon, and nutmeg
Add the sugar and stir well again.

In medium mixing bowl gently beat together the pumpkin, oil, and water. add eggs one at a time, beating well after each addition.

Make a well in center of flour mixture. Add pumpkin mixture and stir just until flour is moistened.

turn into prepared coffee cans, filling to cover second ridge or mark on cans…no more than 2/3 full

Bake in preheated 350 degree oven

Bake until knife comes out clean about 1 hours
