Cookies: Butter Letter
Paste
1 # Almond paste or macaroon paste
2 Cups sugar
3 egss slightly beaten
Crust
5 cups flour
1 # butter hard
1 cup cold water
Directions for paste:
Mix paste and sugar, making sure all lumps are out. Nex mix in eggs. leave this in frig overnight and until you are finished rolling out the crust

Make crust the same as a pie crust, rolling into a ball and leave in frig overnight.
When ready to bake
Divide crust into 5 or 8 balls. Roll each ball into a long strip about 5 in wide. Place paste inside in small roll. turn one end over and rub egg whites over. turn other end over and also the ends, rubbing more egg whites to seal ends.
Bake in 400 over 30-35 min
