Soup: Potatoe Soup (Baked Potatoes or Mashed)

6 cups of either mashed potatoes or baked potatoes chopped up/sliced

2 T. butter or margarine
1 medium onion chopped
1/2 pound bacon cooked, drained, and diced up/frozen is easier to work with.
1 large red pepper, diced
2 cups sharp cheddar cheese
1/2 cup diced chives
4 T. sour cream (more if you like it)
2/3 cups whipping cream or half and half (can use any milk if watching calories

In lareg pot saute onions and red pepper over medium heat in 2 T of butter or margaine. Add bacon, potatoes, and whipping cream to desired consistency. Salt and pepper to taste. Add sour cream and grated cheese and chives.
