Horchata (Rice Water)
3 cups rice
3 cups milk
3 cinnamon sticks broken in pieces (some people like it toasted in a skillet just a little)
1 1/4 cups sugar
6 cups water
soak the rice in water to cover byu at least 1 inch for 3 hours. Drain the rice, and puree with milk and cinnamon. Strain themixture, discarding rice and reserving the liquid. Dissolve the sugar in the 6 cups water. combine the rice liquid with the sugared water. Serve cold/with Ice is good.
It is very good but it has lots of calories. There are approximately 420 calories and the above makes like 8 servings….but it is very good! Never made it with phoney sugar and doubt if it comes out the same but who knows it might be good.
