Mexican Casserol X 6

You can make this casserole six or more different ways and all of them are great.

First of all you can use Hamburger, chicken or whatever kind of meat that you like, or no meat at all.

You can use Cream of mushroom soom, cream of chicken soup, the red enchilada sauce, or the mexican green sauce.

Take one of the above sauces (Large soup with about 1/4 can of water mixed in it. If using the mexican sauces use just as they are. I like the green and red sauce the best. Large cans…not the small cans.

Open the can and place in sort of a big bowl
take corn chips…like the dipping kind and just break them don’t crunch them all up. Stir them in the sauce of choice and then place them in a layer on the bottom of your pan. Spray the pan so it doesn’t stick if you like

Take a layer of cheese. I use both mild chedder and jack, but you can use your favorite.

I then take a layer/small can of diced green chilis

A layer or either chicken (which is really good), or about 1/2-1 pound of hamburger cooked and drained

another layer of the chips stirred in the sauce and layered
another layer of the two cheeses

Poor the rest of the sauce over this all

You can now chop a few chips on top to look pretty

Bake at about 325 for about 1/2 hour to heat all the cheese and blend everything
