Real Mexican Tacos
1 potatoe…cooked and mushed
1 # hamburger…good hamburger
1 dozen corn tortillas
The recipe makes one dozen. I can’t remember making one dozen…I always have to make 3-5 dozen for everyone.
you peel a potatoe, boil it like for mashed potatoes, drain the water off and just mush it. Not a big potatoe. The potatoe gives the tacos moisture. Add the potatoe to the hamburger and mix it with your hands. Put a little hambuger on one half of the tortilla…not the whole thing.
Hot oil…..I have a pan I can put like 6-7 at a time. the oil hot, but not extremely hot….hod the tortilla gently shut and lower it into the pan….cook on both sides by turning. It doesn’t take long…but make sure that the meat is cooked and the tortillas golden. Turn these upside down on a paper towel in like a cake pan.
let everyone fill them as they like.
Shredded cheese
tomatoes
lettuce
canned peas/yes, that’s right…drain the peas
some like onions
some like cilantro
Hot sauce…either homemade or like Pace Picante..you can get that most places
Serve with refried beans and/or spanish rice.
