Pumpkin Roll

Pumpkin Roll

Mix together
1 Cup sugar
3/4 cup flour
3 eggs
1/2 tsp cinnamon
1 tsp soda
2/3 cup pumpkin

Filling
2-8 oz cream cheese
1 cup powered sugar
1 tablespoon vanilla
1 cube butter or margarine (1/2 cup)

Walnuts or pecans crushed

cover 21 x 18 inch cookie sheet wider than pan with wax paper. Butter well, pour batter into pan, sprinkle with walnuts and bake at 375 for 15 minutes.

Turn pan onto towel generously covered with powdered sugar. Remove wax paper, roll and cool. Unroll, cover with filling, re roll. Wrap in foil and store in the freezer.

You can also use a 10 x 15 loaf pan
