Breakfast Casserole

8 oz of your favorite sausage/hot or mild etc, cooked, drained, and crumbled/don’t leave in big hunks

10 eggs beaten a bit

3 cups of milk

8 oz shredded cheese

6 cups bread…in pieces…sorta small pieces. Use your day old bread that is around. Good way to use it up and be very good.

little salt to taste
little pepper to taste

1 med tomatoe diced tiny

2 green onions chopped good

oven 325

in bown mix the eggs, milk, salt and pepper
put 1/2 of the bread in bottom of sprayed casserole pan
1/2 the tomatoe

put 1/2 the sausage and 1/2 the cheese.
1/2 the bread
1/2 the sausage and 1/2 the cheese
1/2 the tomatoe

poor over the egg mixture

Top with the onions/optional
top with some extra added cheese

Cook for about 50-60 minutes till eggs set…if starts to get to brown….put some foil on it…
