Chicken and Rice

Chicken and Rice

2 pound chicken breasts
2 Tab oil
2 can chicken broth
garlic powder
2/3 cup raw rice
1 can 16 oz diced tomatoes (don’t drain)
1 diced green pepper
1/2 cup diced onion, or green onion diced
(I like a bit of fresh cilantro in mine…but that is optional)

Dip the chicken in flour and brown in oil
add the rice, onion, green pepper, garlic powder, salt and pepper to taste…brown this just a bit

Add the broth and water to cover, add the diced tomatoes. Cover and cook probably 30-40 minutes until chicken is done. Stir often
