Pie: Lemon meringue or Lemon Cream

1/2 cup water
2 cups sugar
4 Tab cornstarch
2 Tab flour
1 cup sugar
3 egg yokes
4-6 Tab lemon juice
2 tsp grated rind of lemon
1 tsp salt

put water onto boil…and
mix cornstarch, flour, and sugar with the water slowly using a wire whip as you do. (Takes out lumps)
mix in egg yolks slowly, but first take a little of the hot liquid and mix with the eggs…then pour it in slowly

Cook like 5 minutes stirring constantly

Frmove from fire, add lemon juice, rind and salt

pour into baked pie shell (my recipe or yours)

Meringue
3 egg whites beat stiff, add 3 tab of sugar and 1 tsp of baking powder, dash of salt

Pile it on the pie and bake like 375-400 just a few minutes until tips cooked…..

I like whip cream on mine more than meringue and when the pie is cool and cut…I add the whip cream
