Soup: Spinach
Spinach Soup: 30 minutes
Little Olive Oil to fry in
Take like 4 stalks of celery chopped
Take like 3-4 green onions chopped
a few leaves of cilantro chopped
saute these in the oil for about 10 minutes
Add about 2 cups of chopped fresh spinach and saute
Add about 1 cup of potatoes or rice. I use the frozen little hash squares. They boil and don’t fall apart and do not taste like canned. Real ones fall apart and this is a fast soup.
I also have added a little chicken chopped up. Does not take much.
Add enough water to cover and 1 can of broth or a little chicen seasoning.
Add like 1 cup of milk, cream, or half and half. I use milk.
add about 3-4 oz of valvetta
When cheese melts it is ready
This soup takes about 30 minutes to make and if you like spinach it is very good. I also have added zucinni into it. It should be a brothy soup and is great with sandwhiches.
